After a long, hot summer, I think it’s finally safe to say that back-to-school time is officially here. It is a really strange time for me because this is the first year that I myself will not be going back to school. Crazy right? I still don’t think I’ve quite figured out what to do with myself. This time of year brings about a certain level of anxiety that I don’t think I will ever shake even though I will likely never return to school myself. So, in order to redirect some of this nervous energy, I have prepared for you the best ever peanut butter and jelly sandwich you will ever have the pleasure of eating.
I don’t know if there is anything more quintessentially “back-to-school” than a pb&j. This American classic is one we have all enjoyed in our youth at sometime or another and it is very difficult to hate even in its simplest of states. That said, as I am now on the verge of turning 24 I think it’s safe to say that this sandwich needed a little dressing up if it was to continue to be a mainstay in my recipe rotation. A few little tweaks is all it took.
I started first with the peanut butter. Throughout my childhood I only ever ate the creamy variety. The idea of consuming crunchy peanut butter made me borderline queasy. Only the weirdos ate crunchy peanut butter in grade school. You stayed away from those psychos.
Unfortunately, it turns out those weirdos knew what they were doing. Salted, crunchy peanut butter is where it’s at. It adds great flavor and texture to an otherwise one note sandwich. With the addition of a homemade jam and freshly sliced strawberries and bananas, it is very difficult to hate this sandwich.
So please, whether you yourself are going back to school this year, have children who are going back to school, or simply just wish to submerge yourself in some good ol’ nostalgia this recipe is for you. While these tiny upgrades may seem insignificant, I promise that they will forever change the way you view and enjoy a peanut butter and jelly sandwich.Print
Best Ever PB & J
Made with homemade jam, salty peanut butter and freshly sliced fruit, this PB&J is sure to be the best you’ve ever had.

2 slices fresh, grainy bread
2 tbsp salted, crunchy peanut butter
1/4 c banana, sliced
1/4 c fresh strawberries, sliced
1. Take both pieces of bread and toast in your toasted until desired crispiness is achieved.
2. Spread peanut butter over one slice of bread and jam over the other. Scatter the strawberry slices over the piece with the peanut butter and banana slices over the piece with the jam. Press each side of the sandwich together and then cut down the middle. Serve immediately.
*If you are allergic to peanuts feel free to use a different nut butter or sunflower seed butter.
