Epic Pesto Tahini Sauce

Is it just me or are condiments totally underrated? They are always there for us, saving even the very worst of our kitchen creations. In my oh so humble opinion, they do not get anywhere near enough respect. This Epic Pesto Tahini Sauce is case in point.

I learned about the majesty of sauces and condiments when I first started cooking. If any dish or recipe was falling flat or just seemed a bit “meh,” I would always take it upon myself to create a fantastic accompaniment, typically in sauce/spread form. And guess what?! This course of action has never failed me yet.

That is exactly how this incredible salty, green sauce came into being. I was playing around with a few ideas for a roasted cauliflower bowl and the final product kept feeling lackluster. I looked to see what ingredients I had on hand to pull something quick together and viola! Epic Pesto Tahini Sauce was born!

Use this sauce as a sandwich spread, a veggie topper, or simply do what I do and drizzle it over the top of anything and everything. Just yesterday I added it to a baked sweet potato and then preceded to finish off the rest of the batch with a spoon straight from the bowl of the food processor. Sorry not sorry.

Ingredients

1/4 c fresh basil, packed

1/4 c water

1/4 c tahini

1 tbsp mellow white miso

3 cloves garlic, minced

1/4 tsp sea salt

Instructions

1. Add fresh basil and water to the bowl of a food processor fit with the blade attachment. Process until there are no longer any large chunks of basil remaining.

2. Add remaining ingredients to the food processor and run the machine until all of the ingredients are well-incorporated and the sauce is a beautiful, bright green color. Add in more water if you prefer a runnier sauce.

3. Drizzle/spread sauce over anything you like. Leftover sauce can keep in an airtight container in the refrigerator for 5-7 days or be frozen for up to a month.
