3 Ingredient Nectarine Chia Pudding

What has been my favorite summer snack this year you might ask? Is nectarine everything an appropriate answer? One of my favorite days of the year always falls on whatever day Trader Joe’s begins stocking boxes of fresh nectarines. This began in early June this year and I have been munching down on these bad boys ever since. Odds are if you live on the Central Coast and have had trouble finding nectarines it’s because I ate them all. They’re gone. Sorry.

I am a huge fruit person and every variety holds a special place in my heart but nectarines have always been near the top of the list. I love that they aren’t hairy like peaches, not hard like apples, and not dry like apricots. Instead they are juicy perfection that can only (and should only) be enjoyed during the peak of summertime. Also I now feel the need to apologize to peaches, apples, and apricots. I love you all in your own ways too!

This 3 ingredient nectarine chia pudding is my very own love letter to nectarines. No artificial sweetener is necessary as freshly harvested nectarines possess all the sugary, tangy flavor a girl could ask for. Soft, velvety, and perfectly thick and sweet, you too will fall in love with this magical fruit if you haven’t already.

This little treat can be prepped out in advance and serve you well for a couple of days. It is recipes like this that always remind me that eating healthy doesn’t have to be difficult, expensive, or overly time-consuming. All it takes is a little seasonal fruit and the most minuscule amount of planning. So I encourage you to get out there and educate yourself on the seasonal fruit that is available in your area so as to create for yourself an arsenal of healthy recipes. I hope very much that you choose to include this nectarine chia pudding to keep amongst your summer fare.

3 Ingredient Nectarine Chia Pudding

This chia pudding is naturally sweetened with nectarines and has only three ingredients making it an easy, healthy snack.

Ingredients

1 c vanilla almond milk

2 ripe nectarines

1/4 c chia seeds

Instructions

1. Add almond milk and nectarines to a blender or food processor and run the machine until the mixture is completely smooth. Pour into a medium bowl and stir in the chia seeds. Cover and set in the refrigerator.

2. Refrigerate for at least 4 hours or overnight. Remove from refrigerator and give pudding another stir. The mixture should have a much thicker consistency. Add any desired toppings and serve. Pudding can keep in a sealed container in the refrigerator for 3-5 days.
