These creamy overnight oats are thickened by chia seeds and full of fresh, peachy flavor. A perfect on-the-go breakfast!
2 ripe bananas
2 c rolled oats
1/4 c chia seeds
2 c plant milk
2 ripe peaches
1. In a large bowl, mash bananas until a paste forms and few chunks remain. Add rolled oats and chia seeds to the bowl and stir to combine.
2. Add plant milk and one of the peaches to a blender or food processor and blend for about a minute or until the mixture is completely smooth. Pour into the bowl with the oat mixture and stir to combine. Place in the refrigerator for at least 4 hours or overnight.
3. When ready to serve, top the oatmeal with chunks or slices of the remaining peach. Oatmeal can keep in a sealed container in the refrigerator for 3-5 days.
