Pumpkin Spice Granola

Here it is folks! The very first pumpkin spice recipe of the season! I know this is a flavor that typically begins its reign in September but I like to wait until October. I think a narrowed window makes it just that much more special. Call me crazy. Anyways, I think this pumpkin spice granola recipe is a great way to kick off the season just as it is a great way to kick off your morning!

This healthy granola is filled with:

  • Oats
  • Nuts
  • Seeds
  • Cranberries
  • Plenty of Fall flavors and spices

All of these ingredients come together beautifully to create a pumpkin-driven, nutritious breakfast that will remain on your mind throughout the day. It can also be enjoyed as a snack as it travels well on the go.

Not Fried Oatmeal

It is no secret that the vast majority of commercially available granolas are quite unhealthy. With large amounts of refined sugar and oil, they resemble a dessert topping far more than they do a snack or breakfast item. There are also many granola recipes out there that resemble deep-fried oatmeal. I very much wanted to create one that could never be accused of being such.

Thus, this pumpkin spice granola gets its sweetness from dried cranberries and a small touch of maple syrup. The maple syrup also works well with the pumpkin puree to achieve the desired crunch without an excessive amount of oil.

Get in the Spirit

So, please don’t duck your head during pumpkin spice season in fear of excess sugar and calories. There are healthy, yet still decidedly fun ways to take part in the best time of year without worrying about your waistline. Eat it for breakfast, a snack on the run, or even dessert. No matter which way you choose to enjoy it, I guarantee feelings of a fall-spirited nature.

Pumpkin Spice Granola

Bring your favorite pumpkin spice flavor to your breakfast every morning! This granola is incredibly nutritious and is sure to get you in a Fall mood.

Ingredients

3 c rolled oats

3/4 c pecans, chopped

1/2 c almonds, chopped

1/3 c pumpkin seeds

1 tbsp flaxseed

1 tbsp pumpkin pie spice

1 tsp cinnamon

1/2 tsp sea salt

1 1/2 c pumpkin puree

1/4 c maple syrup

1/2 c dried cranberries

Instructions

1. Preheat oven to 350 degrees F (175 C) and line a large baking sheet with parchment paper. Set aside. In a large bowl, mix together the rolled oats, pecans, almonds, pumpkin seeds, flaxseed, pumpkin pie spice, cinnamon, and sea salt. 

2. In a measuring cup, whisk together the pumpkin puree and maple syrup until smooth. Pour over the dry ingredients and mix until everything is well-coated. Spread wet granola mixture evenly over the prepared baking sheet and place on the center rack of preheated oven. Bake for 26-30 minutes or until granola is golden and crispy.

3. As the granola is cooling, sprinkle the dried cranberries over the baking sheet. Once granola is completely cool, transfer it to a large jar or sealable container. Prepared granola can keep in a sealed container at room temperature for about 2 weeks.
