Pumpkin Spice Oatmeal

I’ve said it before and I’ll say it again: oatmeal is my favorite food. It’s delicious, filling, and helps me start my day off right. Due to my adoration for this basic breakfast staple, I have decided to help it get with the times. With October finally in full swing, it seems only right that Pumpkin Spice Oatmeal should begin gracing our kitchens with beautiful, fall aromas each morning.

This oatmeal is:

  • Healthy
  • Easy to make
  • Ready in only 15 minutes

In my opinion, a breakfast recipe must check each of these boxes if I am even going to consider taking the time to make it in the morning. It needs to be simple, have few ingredients, and be able to be made in the window of time available to me between brushing my teeth and feeding my cats. Sorry not sorry.

Guilt-Free Dessert for Breakfast

A good breakfast for me must also be nutritionally sound. I have never been a dessert for breakfast kind of girl. It just leaves me feeling off for the whole day. Don’t get me wrong, I love a vegan donut as much as the next person but if I’m going to eat it I’m going to eat it at night with the curtains drawn while I watch Queer Eye like an American. While this Pumpkin Spice Oatmeal is a treat in its own right, it doesn’t have to be eaten under such circumstances. It is loaded with plenty of fiber and nutrients to get your day started off right and can be enjoyed in full daylight.

Embrace Your Inner “Basic-ness”

So, not only is this a breakfast fit for any self-respecting person, it is also a breakfast fit for fall. Follow my lead and lean into the season a bit. There is no need to resist the “basic-ness” of it all. The best way to start is by making this Pumpkin Spice Oatmeal right here. Pour it in a bowl, sprinkle on your desired toppings and settle in for a long day. Also, don’t forget to feed your cats!

Pumpkin Spice Oatmeal

Ingredients

2 c water

1 c non-dairy milk

1/2 c pumpkin puree

1 1/2 c gluten-free rolled oats

1 tbsp ground flaxseed

1 tsp cinnamon

1/2 tsp ginger

1/4 tsp cloves

1/4 tsp nutmeg

1–2 tbsp maple syrup

1 tsp vanilla extract

1/4 c pecans, chopped (optional)

2 tbsp pumpkin seeds (optional)

2 tbsp pomegranate seeds (optional)

Instructions

1. In a medium saucepan, whisk together the water, non-dairy milk, and pumpkin. Place on the stove and cook over medium heat until the mixture comes to a boil. Add in the oats and reduce heat to low. Continue to simmer uncovered for 10-12 minutes or until desired consistency is reached. Remove from heat.

2. Stir in the ground flaxseed, cinnamon, ginger, cloves, nutmeg, maple syrup, and vanilla extract. Serve immediately topped with chopped pecans, pumpkin seeds, and pomegranate seeds if desired.
