Raspberry Orange Vanilla Chia Seed Jam

Stove-top jam made with frozen raspberries, chia seeds and plenty of orange and vanilla flavor.

Ingredients

1 12oz bag frozen raspberries

2 tbsp agave nectar

1 tbsp orange zest

2 tbsp chia seeds

1 tsp vanilla extract

juice of 1/2 of an orange

Instructions

1. Place frozen raspberries, agave nectar, and orange zest in a small saucepan on the stove and cook over medium-high heat for about 5 minutes stirring frequently. Break up any large raspberries with a spoon.

2. Once raspberries are no longer frozen, stir in the chia seeds and reduce heat to medium low. Simmer stirring frequently until the jam reaches desired consistency, about 15 minutes.

3. Remove jam from heat and stir in vanilla extract and orange juice. Allow to cool for a few minutes before transferring to a jar. Place jam in the refrigerator and chill for at least 2 hours before using. Fresh jam can keep in a sealed container in the refrigerator for 2 weeks or be frozen for up to a month.
