There is nothing more satisfying than a fruit dessert. Luckily for me, I adore them all! I love apple pie, peach cobbler, cherry crisp and just about any other flaky and fruity combination people have come up with over the years. These vegan strawberry rhubarb crumble bars were born out of my obsession with dessert and my love of fruit.
Where I come from, summer means strawberries. My hometown is known for our huge, sweet strawberries and I am always sure to buy a carton (or a whole flat let’s be real) whenever I am at the farmer’s market. However, my dad is from the mid-west and I have a lot of family there still. For them, summer means rhubarb. As such, it only made sense for me to combine these two great loves and create a crumble so lovely it had to be made portable in bar form.
This fruit crumble is layered so as to make it less messy and allow anyone to enjoy it without the need for a plate or utensils. Napkin always optional. They begin with a soft, sugar cookie-like bottom crust which is then covered with the strawberry-rhubarb mixture and finally topped with a sugary, crumble sprinkle. When cut into bars, each layer holds it own making for a wonderfully indulgent experience.
You reading this need to give these bars a try, especially if you have never had rhubarb! It is crazy to me to think that there is a large percentage of people out there who have never tried it at all. There are also many haters out there who have perhaps tried it once raw and the bitterness frightened them from ever trying again. Take my word for it: rhubarb in dessert is absolute magic and worthy of a second chance.

Vegan Strawberry Rhubarb Crumble Bars
These Vegan Strawberry-Rhubarb Crumble Bars are the perfect combination of sweet and tangy. Enjoy responsibly!

For the Crust
2 c all purpose flour
2/3 c brown sugar
1 c vegan butter
1/2 tsp salt
1/4 c almond flour
1/2 c rolled oats
2 c fresh strawberries, sliced
2 c fresh rhubarb, cut into 1/2 in pieces
1/4 c sugar
1 tbsp orange zest
juice of 1/2 an orange
1 tbsp cornstarch
1. Preheat oven to 350 degrees F (175 C) and line an 8×8 inch pan with parchment paper. Set aside. In a large food processor, combine flour, brown sugar, vegan butter, and salt. Pulse until a ball of dough forms. Take slightly more than half of the dough and press it evenly into the bottom of the prepared pan.
2. In a large bowl, combine sliced strawberries, rhubarb, sugar, orange zest, orange juice, and cornstarch. Fold together until all ingredients are combined. Spread fruit mixture over the top of prepared crust.
3. Add the almond flour and rolled oats to the remaining crust dough in the food processor. Pulse until the mixture is light and crumbly taking care to not over process the oats. Sprinkle mixture evenly over the top of the fruit mixture in the pan. Bake bars in preheated oven for 45-50 minutes or until golden brown. Allow bars to cool for at least 20 minutes before slicing. Serve with dairy free whipped cream or ice cream. Bars can keep in a covered container at room temperature for 2-3 days.
